Casava Cake

Cassava Cake (Philippine Dessert)

1 can coconut milk (2 cups)
1 can evaporated milk
2 pkgs grated cassava (4 cups)
6 eggs
1 cup sugar
1 teaspoon vanilla

Mix all ingredients in a bowl. Pour into buttered 9 x 13 cake pan. Bake at 350 degrees until done. About 1 – 1 ½ hours.

Notes: This is not really a cake. We just grew up calling it that. It’s more like a flan type of dessert. Recipe comes from my mom. Melted panocha (or brown sugar) in coconut milk can be poured over top and spread before baking for a sweeter variation.
