Lumpia Shanghai

Lumpia (Philippine Eggrolls or Spring Rolls)

1 lb fresh lean ground beef (raw)
1 egg (optional)
2 carrots chopped finely
2 celery chopped finely
1 med onion chopped finely
ground pepper to taste
soy sauce to taste
1 pkg eggroll wrappers
small bowl warm water or egg whites
vegetable oil

Mix the 7 ingredients in a bowl. The mix should be sticky. Separate the wrappers. They must be completely thawed. They should be pliable. If too dry, place wrappers with moist paper towel in microwave for 20 seconds. Use about a tablespoon or so of mixture to form a line near bottom of wrapper. Take bottom and roll the wrapper around the mixture 1 or 2 times. Fold in the ends & roll to almost the top. Use water or egg whites to moisten top of wrapper. Roll remainder of wrapper. Deep fry lumpia till golden brown. 

Notes: Great with sweet & sour dipping sauce or Thai chili sauce. You can freeze the lumpia before frying. Freezing helps wrappers stay sealed. Recipe came from my mom.

Green pepper sliced into strips
American cheese sliced into strips
Celery sliced into strips
Fresh green beans tips snapped off
Carrots sliced into strips
1 pkg eggroll wrappers
small bowl warm water or egg whites
vegetable oil

Separate the wrappers. They must be completely thawed. They should be pliable. If too dry, place wrappers with moist paper towel in microwave for about 20 seconds or so. Take one wrapper and place one of each ingredient along the bottom of wrapper. Take bottom and roll the wrapper around the mixture 1or2 times. Fold in the ends & roll to almost the top. Use water or egg whites to moisten top of wrapper. Roll remainder of wrapper. Deep fry lumpia till golden brown. 

Notes: Great with sweet & sour dipping sauce or Thai chili sauce. You can freeze the lumpia before frying. Freezing helps wrappers stay sealed. This particular recipe is an ova-lactic vegetarian and not vegan vegetarian. Cheese can be removed from recipe. Sliced deli meat can be used for a non-vegetarian version. Recipe came from my mom.

Shredded cheese to taste (your choice of cheese)
1 medium onion chopped
1/2 medium red bell pepper seeded and chopped
1/2 medium green bell pepper seeded and chopped
100 grams chopped pepperoni
1 package of ground sausage
1/4 cup black olives chopped
1/2 cup mushrooms chopped
garlic powder to taste
Italian seasonings to taste
pizza sauce or spaghetti sauce for dipping
Lumpia wrappers
oil for frying
small bowl of warm water or egg whites for sealing wrappers

Mix first 10 ingredients  in a large bowl. The mix should be sticky. Separate the wrappers. Use about a tablespoon or so of mixture to form a line near bottom of wrapper. Take bottom and roll the wrapper around the mixture 1 or 2 times. Fold in the ends & roll to almost the top. Use water or egg whites to moisten top of wrapper. Roll remainder of wrapper. Deep fry lumpia till golden brown. Serve with pizza or spaghetti sauce for dipping.

Notes: This recipe idea came from www.pinoyrecipe.net. For a vegetarian version I replaced the sausage with firm tofu (mashed) and used a vegetarian pepperoni (Redwood Co. brand) and also a lactose free cheese (I’m lactose intolerant). My family enjoyed this immensely.  :)
