Pancit

Pancit (Philippine Noodles)

1 lb chopped chicken or pork or your choice of meat
1 chopped onion
2 garlic cloves
soy sauce to taste
black pepper to taste
1 pkg Pancit noodles
2 carrots chopped or sliced thin
1 celery chopped
2 cups chopped cabbage
1 cup fresh green beans sliced diagonally (optional)
1 cup water
Wok

Cook top 5 ingredients till meat (or substitute) is done. Add vegies and cook for a couple of minutes. Add pancit noodles and some water. Cover. You may need to add more or less water. Stir occasionally. Cook till noodles are soft but not too soft. 

Notes: Excellent served with steamed rice. The meats can be removed from ingredients to make a vegan vegetarian dish. Recipe came from my mom. There are multiple types of Pancit noodles; Canton is made from wheat flour (no eggs) and Bihon is made from rice flour (no eggs). For a special treat use both Canton and Bihon noodles to make Pancit Bam-e.
